Gambas al Ajillo con Tomate (Spicy Garlic Shrimp with Tomatoes)

Serves 3-4

Prep time: 1 hour, including thaw time if using frozen shrimp

Cooking time: 15 minutes

Ingredients:

4 cloves garlic, pressed

1 lb frozen large shrimp (21-25 count) - thawed, peeled, and deveined

1 can fire-roasted, diced tomatoes (I prefer the ‘no added salt’ version)

1 tbsp hot smoked paprika

1/3 cup extra-virgin olive oil

2 tbsp dry sherry (optional)

1 tbsp Italian flat-leaf parsley, chopped

Kosher salt and pepper to taste

Directions:

1. Season shrimp with kosher salt, pepper, and paprika. Mix to coat.

2. Heat garlic and oil in a skillet over medium heat. Cook until garlic starts to turn golden, about 3 minutes.

3. Add shrimp and increase heat to high. Stir shrimp frequently until just about cooked through, about 3-4 minutes.

4. Add the tomatoes and sherry (if using). Cook, stirring continuously, until sauce comes up to a boil and shrimp is cooked through, about 1 minute more. Remove from heat.

5. Stir in parsley with a spoon, and serve.
