Margarita Jelly Squares

Makes approximately 30-32 cubes

Prep time: 2.5 hours (including two hours of chill time)

Cook time: 15 minutes

Ingredients

1 c. tequila blanco

1 c. fresh lime juice

1/2 c. simple syrup (flavored if desired)

2 envelopes powdered gelatin

Flaked sea salt (Maldon is great)

Directions

1. Put lime juice into a small saucepan and sprinkle with gelatin. Soak for 2-3 minutes.

2. Heat mixture over very low heat until gelatin dissolves, about 3-5 minutes more.

3. Remove from heat, and let it cool for 2 minutes. Stir in the tequila and simple syrup.

4. Pour into a loaf pan or ice cube trays and refrigerate for 30 minutes or until partially set. Then lightly sprinkle top with flaked sea salt and return to fridge to set fully, approximately two hours total. (If you’re skipping the salt, you can just let the mixture stay in the fridge the whole time until set.)

5. Cut into 1” squares and serve!
